description
Harvesting is carried out at intervals of 7 to 15 days only for ripe cherries, and after harvesting, it is carefully sorted in three stages: float sorting - foreign matter removal - and hand picking.
The pulped cherries are fermented for 60 hours and the floating beans are removed with a one-time wash.
The drying process takes time and performs low-temperature drying for up to 160 hours, resulting in a finish that combines transparency and clear acidity.
